Debbie Shelkey-Lawson: Thank You, Brunswick Stew

I’m trying to plan meals that will be easy to put on the table or will have plenty of leftovers so they are easy to pull together a second night.

In the last few days, I’ve received encouragement from my friends who saw my post on Facebook about my goals.

I usually have one family dinner a week where we’ve all managed to be home at the same time and that’s probably where I still am. I made homemade chili last Friday, and we were all home to enjoy that dinner. My 19-year-old son, Corey, left on Sunday to return to his university which is three hours away. He lives on campus. I threw some homemade Brunswick Stew in the crockpot (from the freezer!) before church so it was piping hot by the time we got home.

Last night, I made tacos and salad for dinner. My husband, Ricky, and children Jacob and Kenley were home for dinner, but Eileen was late from swim practice. Jacob and Kenley were really hungry coming in together from soccer conditioning at the high school. We kept Eileen’s dinner warm for her. 

I’m trying to plan meals that will be easy to put on the table or will have plenty of leftovers so they are easy to pull together a second night. It was handy to have my Brunswick Stew in the freezer for Sunday.
