Debbie Shelkey-Lawson: Teenage-Friendly Casseroles

This family dinner made my heart burst and that’s what my resolution is all about for me.

Hi Guideposts! We had such a fun family dinner last night.

Two of my teenagers stayed after school for soccer and my daughter Eileen was home having fun with her best friend. Eileen just finished high school swim team season so she got home early and of course, the second I get home from work she asks, “What’s for dinner?” I made two teenage-friendly casseroles—Chicken-Cheesy Rice and mashed potatoes, chicken with biscuits. I put together a quick salad and brought out the applesauce—my two favorite side dishes.

I timed dinner to be ready when my soccer players got home. Jacob’s best friend came over after soccer too and I invited him to dinner. (I had plenty!) Five teenagers gathered around the table with my husband and me—it was great! Stories about school and soccer made the conversations lively and fun. We sang grace before the meal, as usual. I think Will (Jacob’s best friend) is joining in now with our family supper blessing.

Cleaning up after dinner, I had a big smile on my face. We even had leftovers! The kids all thanked me for dinner.

I just had to share this story because this makes my heart burst and that’s what my resolution was all about for me.
